Dean’s Hearty Beef & Veggie Ragu with Protein Pasta

Ingredients:

  • 500g extra lean beef mince

  • 375g packet of protein pasta

  • 300g carrot, diced

  • 300g onion, diced

  • 300g celery, diced

  • 300 g zucchini, diced

  • 300g mushrooms, sliced

  • 2 cans whole tomatoes, crushed

  • 400g Passata di Sicilia (Mutti)

  • Parmesan cheese, for serving

  • Seasoning (salt, pepper, Italian herbs) to taste

Instructions:

  1. Brown the beef: In a large pot or Dutch oven over medium heat, brown the beef mince, breaking it up with a spoon as it cooks. Season with salt and pepper.

  2. Sauté the vegetables: Add the diced carrots, onions, celery, zucchini, and mushrooms to the pot. Cook until softened, about 10 minutes.

  3. Add the sauce: Stir in the crushed tomatoes, passata, and Italian herbs. Bring to a simmer, then reduce heat and cook for 1.5 - 2 hours, stirring occasionally. The longer you simmer, the richer the flavor will be.

  4. Cook the pasta: While the sauce simmers, cook the protein pasta according to package instructions. Drain and set aside.

  5. Combine and serve: Once the sauce is thickened and flavorful, stir in the cooked pasta. Divide into 6 meal prep containers. Top with grated Parmesan cheese before serving.

Tips:

  • Feel free to substitute your favorite vegetables or add others, such as bell peppers or spinach.

  • For a spicier ragu, add a pinch of red pepper flakes or a dash of hot sauce.

  • Store leftovers in the refrigerator for up to 4 days or freeze for longer.

  • Also don’t restrict to just pasta can serve on rice or a baked potato, remember this will change the macros slightly.
