The Goods:
About 150g salmon (protein power!)
1 medium sweet potato (good carbs!)
1 cup spinach (vitamins!)
A tiny bit of olive oil
Paprika, chili powder, salt, pepper (for flavour)
A squeeze of lemon
Let's Do This:
Sweet Potato: Chop the sweet potato into small bits. Chuck it on a baking tray with a little olive oil, salt, and a tiny bit of chili powder if you like. Roast in the oven at 200°C for about 25-30 minutes until soft.
Salmon: Pat the salmon dry. Sprinkle with salt, pepper, paprika, and a bit of chili powder.
Cook Salmon: Heat a non-stick pan with a tiny bit of olive oil. Cook the salmon for about 4-5 minutes on one side, then flip and cook for another 3-4 minutes until cooked through. Squeeze some lemon juice over it.
Spinach: In the same pan, throw in the spinach for about a minute until it looks wilted.
Bowl Time: Put the sweet potato in a bowl, add the spinach, and then put the salmon on top.
