Spicy Salmon and Sweet Potato Bowl!

Here's the simple version of my Spicy Salmon and Sweet Potato Bowl

The Goods:

  • About 150g salmon (protein power!)

  • 1 medium sweet potato (good carbs!)

  • 1 cup spinach (vitamins!)

  • A tiny bit of olive oil

  • Paprika, chili powder, salt, pepper (for flavour)

  • A squeeze of lemon

Let's Do This:

  1. Sweet Potato: Chop the sweet potato into small bits. Chuck it on a baking tray with a little olive oil, salt, and a tiny bit of chili powder if you like. Roast in the oven at 200°C for about 25-30 minutes until soft.

  2. Salmon: Pat the salmon dry. Sprinkle with salt, pepper, paprika, and a bit of chili powder.

  3. Cook Salmon: Heat a non-stick pan with a tiny bit of olive oil. Cook the salmon for about 4-5 minutes on one side, then flip and cook for another 3-4 minutes until cooked through. Squeeze some lemon juice over it.

  4. Spinach: In the same pan, throw in the spinach for about a minute until it looks wilted.

  5. Bowl Time: Put the sweet potato in a bowl, add the spinach, and then put the salmon on top.

Boom! Easy peasy Spicy Salmon and Sweet Potato Bowl. Good for you and tastes great. Enjoy!
